Classic Cooking for College: Recipe for Chicken Enchilada Casserole

It is a great thing to dine out – trust me, it is one of my favorite things to do. But a student cannot live on commercial or restaurant food alone. There will be days when you feel like “nesting” in your dorm room and making the comfort food that you have probably been raised on. It is also great to have a few recipes that you have perfected and can make and serve on your own!

The recipe below will make you the rockstar of your dorm! It is easy to prepare, and because it is a casserole, it is easy to save and reheat. Try and enjoy!

Chicken Enchilada Casserole

Ingredients:

  • 4 boneless chicken breasts
  • 2 16 oz. cans of enchilada sauce
  • 10 flour tortillas
  • 1 pound, shredded cheddar
  • One green and one red pepper
  • One onion
  • 2 cloves of garlic Salt and pepper to taste

Directions: Cut chicken, peppers, and onions into strips and sauté until cooked completely. Add cans of enchilada sauce and crushed cloves of garlic and let simmer for about 15 minutes. Remove from heat. Line a large casserole dish with tortillas. Ladle enchilada mixture onto the tortilla. Top with cheese, and layer with more tortillas. Repeat until casserole dish is filled. Top layer should be shredded cheese. Bake at 375 for 20 minutes until cheese on top is bubbling.
